The Wine Conversation – Making White Burgundy with Jasper Morris MW & Sarah Kemp
Sep 30, 2025From The Wine Conversation with Sarah Kemp (wine-conversation.com):
In our latest 10-Minute Masterclass (actually 12 minutes this month, as there was just too much great information to leave out), Jasper Morris MW, author of “Inside Burgundy,” looks at Making White Burgundy. There are conferences about Pinot Noir, he notes, but White Burgundy isn’t talked about enough.
Jasper begins by looking at the main grapes, Chardonnay and Aligoté, and relates how Aligoté used to struggle to ripen, but not any more, as he moves on to the ways producers are modifying viticulture to respond t...

Jun 01, 2025Over at "The Wine Conversation", Sarah Kemp welcomes Jasper Morris MW, author of “Inside Burgundy” and the website www.insideburgundy.com, who takes a deep dive into Beaune, “the centre of the universe for wine lovers.” That small town is situated south of Dijon and has 20,000 inhabitants. The main grapes are Pinot Noir and Chardonnay. This is where you find the merchant houses, the best-known being, Bouchard Père et Fils, Louis Jadot, Louis Latour and Chanson Père et Fils. There are a few domaines, and Jasper cites Domaine de Croix as one to know.

Episode Summary:
Jasper Morris MW, author of “Inside Burgundy” and www.insideburgundy.com, takes a deep dive into the appellation of Morey-St-Denis, which is situated in the Côte de Nuits between the villages of Chambolle-Musigny in the south and Gevrey-Chambertin to the north.
He explains how its terroir is similar to Gevrey-Chambertin, with its underlay of limestone which stretches through to Chambolle-Musigny. The main grape is Pinot Noir, but there is a little white wine produced, Chardonnay and Aligoté. Morey...

"Summary: Jasper Morris MW, author of “Inside Burgundy” and www.insideburgundy.com, takes a deep dive into Chablis premiers crus. He explains that Chablis is based in northern Burgundy in the Yonne département. The river Serein cuts through the limestone plateau, which consists of Portlandian limestone, which is very hard, and is found on slopes that have not eroded much, and Kimmeridgian limestone, which formed when the sea receded, and is full of marine fossils. The best vineyards, Jasper believes, are on Ki...

"Episode Summary: In our latest 10-Minute Masterclass, Jasper Morris MW, author of “Inside Burgundy,” takes a look at the appellation of Volnay, which is situated in the Côte de Beaune, a couple of villages south of Beaune itself. Historically, Jasper explains, Volnay has greater significance than most Côte d’Or villages, as the Dukes of Burgundy built a summer palace there – many of the vineyards have the title “Duc” in their name.

There are a thousand producers growing grapes, but a lot of their grapes go to the Cave Cooperatives. The soil is a clay-limestone mix, as is true for the Côte d’Or. Jasper explains that if it is called Mâcon it is almost certain to be chardonnay, and it certainly is if it is called Vire-Clessé or Pouill...

JMIB Live: The 2020 Vision
Jan 17, 2022In December I completed my marathon tastings of the 2020 vintage in the Côte d’Or. Since then, with brief breaks on 25th December and 1st January, I have been compiling all my tasting notes which are available to subscribers here. At last I have resurfaced – just putting the finishing touches to Chablis 2020 – before starting the next round of tastings and it is time for a webinar to discuss the 2020 vintage and what’s happening on the ground here in Burgundy.

May 07, 20216 May 2021: The news has been full of the killer frost of 2021 in Burgundy – and indeed the rest of France, and further afield. Having lived through 2016 when the frost induced “disaster” message went out so effectively that it compromised from the start any verdict on the vintage and indeed the prices at the 2016 Hospices de Beaune auction, my first vintage as consultant, I want to delve deeper into all the parameters this time round. We need to understand, if we can, just what is going on.

The Charm of Burgundy
Mar 19, 202115 Mar 2021: One of the wonderful features of burgundy is the multiplicity of place names, many of which feature in several different appellations. Theoretically there is a reason behind each name. With this tasting we take a look at the magical name of Charmes which can be found at village, premier cru and grand cru level. Is there a thread which links the Charmes vineyards in different villages? Join in to find out where the name came from and how they all link up.

Feb 28, 202123 Feb 2021: There is history of innovation here with it being one of the first Domaines to practice estate bottling in the 1930s, and perhaps more significantly the Ponsots were among the first growers to understand the importance of clones and clonal selection – many of the most important Pinot Noir clones originate from their vineyards.
The first Ponsot on the scene was William, originally from St Romain but on returning from the Franco-Prussian war he settled in Morey St Denis in 1872 and bought vineyard land including the Clos des Monts Luisants. He was succeeded in 1920 by his...

The next door vineyard has a multitude of different plots, with a variety of different soil types – yet somehow the mineral class of Cazetiers shows through, whatever the style. The appellation is sometimes criticised because there is too much red wine territory which has been set to producing chardonnay, but the best parts of the village can make magical wines. I have chosen six of the finest producers of the village covering terroirs that compete with the best. Will vineyard or vigneron win out?

Ancient Vines
Feb 15, 202112 Nov 2020: Just how important is vine age in Burgundy? Producers like to wax lyrical about their Vieilles Vignes and the received wisdom is that old vines make for more concentrated wines. We will test thus out with 6 beautiful Burgundies all made from vines planted before the Second World War, so at least 89 years old.

The quality of winemaking is consistent and very much in the modern, quality-oriented genre, although the practice of very gentle oak treatment and little racking continues, so that each cuvée shows a very individual character.

Jan 13, 202118 June 2020: Benjamin Leroux is one of the new generation Burgundian winemakers, who has made a big impression in a relatively short time. Benjamin, the gifted manager/winemaker of Domaine Comte Armand launched his own label with the 2007 vintage and works from a brand-new winery in the centre of Beaune (just off the Boulevard) that he shares with Dominique Lafon and two other wine growers.
Benjamin’s wines stand out for their terrific quality – the sense of opulence is vivid, yet terroir is evident above all else. Burgundy expert, Jasper Morris MW, is in conversation with Benj...

Jan 13, 20211 July 2020: For so many years the “new generation” of exciting young Burgundians at the helm of their family domaine meant the likes of Dominique Lafon, Etienne Grivot, Ghislaine Barthod, Louis Boillot and co. Now, in turn, it is time for them to be thinking of handing on the baton.
We invited Léa and Pierre Lafon, Mathilde Grivot and Clément Boillot-Barthod to show two wines each and to tell us what it feels like to step up to the plate. under the guidance provided by a member of their parents’ generation: Jasper Morris MW.

With a wealth of experience and an abundance of stories to share, join Ludivine and Jasper Morris MW as they present six classic wines from this classic icon of the Burgundian wine scene.

Jan 04, 202123 May 2020: 2015 is certainly a candidate for an ‘All Time Great’ rating. But just how good are the red wines of Burgundy in 2015? Do they combine the power of 2005 with the grace of 2010? Do they have the potential to develop extra depth and layers of flavour with age. To try to answer these questions Jasper looked at this highly touted vintage through the lens of six samples from different parts of the Côte.

Jan 04, 20215 June 2020: With only Corton-Charlemagne and the Montrachets in the grand cru bracket, we need to test out the options among the finest 1ers crus which can often be just as rewarding and rather better value for money. We have selected one wine from each of six villages – including a rarity from the Côte de Nuits – to test out this theory.

Jan 04, 202115 June 2020: Myths about Corton-Charlemagne abound, but it is accepted that part of the vineyard did once belong to Charlemagne, King of the Franks, Holy Roman Emperor, reformer of education, father of Western Europe and famously, a wine lover…
Almost unique among Burgundy growers for only producing grand cru wines, Domaine Bonneau du Martray owns 11 hectares of vines on the famous hill of Corton, one of the largest holdings of grand cru vines of any Burgundy producer. The vast majority of the vines are chardonnay with just 1.5 hectares of pinot noir, making Corton-Charlemagne and Corton respectively.

Jan 04, 202111 June 2020: Is this the new mainstream? Or are biodynamic practitioners “Out where the buses don’t run”? Certainly a number of cult domaines have espoused this philosophy of grape growing and winemaking.
To talk us through how the biodynamic movement has developed in Burgundy, I have selected six wines from among the most noted producers, so we can judge for ourselves what biodynamics really means in wine.

Maybe the sea of mass market Chablis – and indeed misrepresentations of Chablis over the years – has hidden from view the joy which this region can bring, in authentic hands. Though we shall discuss Chablis as a whole, from Petit Chablis to Grand Cru, the tasting will feature 6** 1er cru wines from exciting producers, both classic names and some unconventional newcomers. The latest in our line of top level Burgundy webinars will review three pairs of wines with each pair showing differing approaches to the complex question of what to put in your fermentation tanks: just the berries or the whole bunch of grapes, stems and all.
